JERUSALEM MINCE PIES

A variation on the traditional mince pies made with fruit mince. These ones have more of a Middle Eastern taste.

HOLIDAY BEEF ROAST

MARINADE, 10 cloves garlic, peeled, 45 ml (3 T) chopped rosemary, 15 ml (1 T) olive oil, 15 ml (1 T) red wine vinegar, Pepper to taste

SPICY LEG OF LAMB

The leg of lamb is slowly cooked in rooibos with spicy flavours and orange.

MOROCCAN CHICKEN PIE

The spicy filling is wrapped in filo pastry instead of the normal puff pastry.

KALE SALAD

Kale is the greens of the moment, but can be quite hard. Feel free to use any other green leaves instead.

QUINOA & ASPARAGUS SALAD

HERB PESTO, 20 g fresh parsley, 20 g fresh basil, 20 g fresh rocket or coriander, 10 ml (2 t) chopped mint, 80 ml (1/4 c) olive oil

ORIENTAL WATER MELON SALAD

VINAIGRETTE, 60 ml (1/4 c) strong Carmien Ginger and Chilli Green rooibos tea (2 bags), 60 ml (1/4 c) strong Carmien Green Honeybush, Mint & Rooibos tea (2 bags)

CHILLI GINGER PORK NECK

Ginger and chilli paired with slightly marbled pork neck is a lovely combo. The water melon salad goes well with it.

CRISPY PIZZA-FLATBREADS WITH CHOPPED TOMATO SALAD

These flatbreads are ideal to serve as part of a festive table or to nibble on before the main meal. The chopped salad is ideal to top it with. OR you can serve it with olive cream cheese, hummus, olive oil, dukkah and sea-salt flakes.
