BRAAI FOR DAD

There is no way better to treat Dad on Father’s day than with a proper braai. These recipes are really yummy (our photographer loooved them) and also so so easy to prepare.

THAI CHICKEN WING SKEWERS

Chicken wings threaded onto skewers make a lovely starter. Serve it with any left-over marinade and a herb mayonnaise.

Makes 12 skewers
Preparation: 20 min
Braaiing: 30—40 min

QUICK THAI BBQ MARINADE

4 cloves garlic, chopped
45—60 ml (3—4 T) chopped coriander
160 ml (2/3 c) light soy sauce
180 ml (3/4 c) CarmiƩn rooibos tea made with 4 bags chilli & ginger and 2 bags lemongrass & ginger
Juice of 1 lime

WINGS

12 chicken wings, thread onto skewers
Salt to taste

MAYONNAISE

80 ml (1/3 c) finely chopped basil leaves and coriander
Creamy mayonnaise and yoghurt to taste

1. MARINADE & WINGS Mix together all the marinade ingredients and pour over the wings. Marinate for at least 30 minutes, preferably overnight.
2. Braai over medium-high heat, turning often and basting every now and then. Braai for about 30–40 minutes till brown and done.
3. Boil any left-over marinade and serve with the wings
4. MAYONNAISE – Mix the chopped herbs into the mayonnaise and serve with the wings.
